Ingredients
2 tablespoons coconut oil
5 cloves garlic, minced
1 bag (about 10 oz) frozen corn, rinsed and drained
4 medium carrots, grated
2 cups white rice, rinsed thoroughly (3x) and drained
3 cups water (optional- chicken stock for more flavor)
Preparation
Step 1
Heat a large pot over medium-high heat for 2 minutes.
Step 2
Add the coconut oil and minced garlic to the pot. Sauté for 30 seconds, stirring frequently, until fragrant.
Step 3
Add the rice, stir in to coat it with the oil and garlic mixture.
Step 4
Cook the rice for 1 min to absorb the spices. Pour in the water and bring everything to a boil. Reduce the heat to a low simmer, cover, and cook for 10 minutes until most of the water is absorbed.
Step 5
Incorporate the veggies and mix well. Cover again and cook for another 10 minutes on low heat.
Step 6
Fluff and Serve
Turn off the heat, fluff the rice with a fork, and serve warm.
Serving Tip- Pair with grilled chicken, ground beef, or sautéed shrimp for a complete, balanced meal.
