The Power of Canned Fish, Canned Meat, and Frozen Veggies

- Frozen Vegetables: Veggies can retain their nutrients and are as healthy as fresh produce when they are Flash-frozen at it's freshest time. They eliminate the worry of spoilage and can be steamed, roasted, or sautéed for quick meals.

Here’s an easy and delicious Salmon Cakes recipe that highlights the simplicity and nutrition of canned fish.

Ingredients
3 cans salmon (drained, excess liquid squeezed by hand)
2 eggs
1 ½ tbsp dried dill
½–1 tsp salt (to taste)
½ medium red onion, diced small
2 tbsp capers
6–8 black olives, finely chopped
2 tbsp Dijon mustard
2 tbsp rice flour
2 tbsp coconut flour
Preparation
Step 1
- Drain the canned salmon and squeeze out any excess liquid using your hands.
- In a large mixing bowl, flake the salmon with a fork.

Mix the Ingredients
- Add dill, salt, diced onion, capers, olives, and Dijon mustard to the salmon. Mix thoroughly.
- Add eggs and mix well until combined.
Step 3
- Add rice flour and coconut flour (1 tbsp at a time). Mix well to form a cohesive mixture.
- If the mixture feels too wet, slowly add the remaining 1 tbsp of coconut flour. (The humidity levels in your environment can affect the texture.)
Step 4

- Scoop approximately 2 tbsp of the mixture and shape it into patties. Repeat until all the mixture is used.
Step 5
Cook the Salmon Cakes
- Place the patties in an air fryer and cook for 6-7 minutes on each side at 375°F-400°F.
Alternatively, you can pan-fry them in a little lard/tallow/ or coconut oil until golden and crispy.
Step 6
Serve and Enjoy
- Pair your salmon cakes with tzatziki sauce, a side salad, or any other dipping sauce of your choice.
